I cannot get the correct distance between two points. I have set the projections to latitude/longitude and MS State plane East and the distance comes up to be .003 or some value very similar. The distance should over 5280 feet.
All data points are collect in NAD 83 and .shp files.

Jack,
Your View->Properties->Map Projection should be set to US State Plane 1983 Zone 2301 - Mississippi Eastern feet. This is what the map will display the data in.
Your Lat/Long layer properties->On The Fly Projection should be set to Lat/Long Decimal Degrees. This is what your data layer projection is.
The map now knows the in projection (lat/long) and out projection (MS East Feet) and so will reproject the data.
Please let me know if this resolves the problem.
